Protein Powder Muffins!


Almost everyone I know exercises or at least has “exercise” on their “To-Do List”.  I have never met a person who went to the gym or went for a run outside and later regretted spending their time exercising. For most people the best feeling is right after you’ve exercised and the hardest moment is usually the hour before you exercise when you are deciding whether or not you want to go to the gym! This protein powder muffin recipe is great for the hour before you workout OR the hour after you workout.  I am so pleased to share that I guarantee THIS WILL BE THE MOST DELICIOUS protein powder muffin you have EVER tasted! I tested this recipe 2 times on 2 different groups of people and everyone loved them. 


The first time I made it I brought it to my husband's office around 3pm in the afternoon.  There is one teacher at my husband's office who loves to workout and he told me a week later how good the protein powder muffin was and I respect and trust his opinion. By the way - the irony of when he was telling me about the protein powder muffin is that he was eating another one of my desserts (a cookie of some sort) and he wasn’t commenting on the cookie he was eating instead he went back to the protein powder muffin he ate a week ago which allowed me to conclude that the cookie was not so good but the muffin was! 


I wanted to take a moment to share with you the best way to make this muffin! I wanted to start this blog so that my friends, family, and all of my personal and online clients would learn how to cook and bake. I want to tell you that I feel cooking is for everyone because everyone eats and we eat multiple times a day! Even if you have never baked something before I am hear to share with you that you can do it … and it won’t be hard. The 2 most important things are to make sure you have all the ingredients and then GO SLOW and read the directions carefully….if something says to beat the hand mixer on medium speed then make sure its on medium speed! 


This protein powder muffin requires 2 main steps … stirring the dry flours together in one bowl and then in another bowl beating with a hand mixer the wet ingredients. If you don’t have a hand mixer you can buy one very cheap on amazon. The #1 best seller hand mixer on amazon called Hamilton Beach with snap-on white case is just $12.96.  I also looked and the KitchenAid 5 speed ultra power hand mixer in empire red is $39.85 and NO I do not get a referral fee for these 2 mixers I just happen to find that my friends and clients need to know these things … if they have never baked before its helpful to have a person share which ingredients taste the best and which appliances can make it practical to actually execute the recipe. I don’t want people to just read these recipes … my wish for them is they actually make the recipes and create joy through doing so. I still remember 10 months ago when I didn’t even own a hand mixer and was overwhelmed about the idea of buying one and my mom gifted me a $20 hand mixer from bed bath n beyond and it opened up a whole new world to me! Someone else helped me to get my hand mixer and I just want to make sure if you don’t have one … that I can help you get started too. 


The bottom line is that if you take the time to gather these ingredients and make these protein powder muffins and share them with you friends, family, and co-workers … everyone will love them! The reason these protein powder muffins are so different from all other protein powder muffins is that they are NOT DRY AT ALL … instead they are creamy and chewy and moist … even your children will love them! I also included an optional frosting recipe below in case you want to make protein powder muffins with frosting sometimes as well. Looking forward to hearing from you once you make the muffins!



Prep Time: 15minutes 

Cook Time: About 17minutes for Mini Muffins and 20minutes for Regular Size Muffins 

Ready in: 35 minutes


INGREDIENTS For Creamy Chewy Chocolate Protein Powder Muffins: 


1/3 cup of MaryRuth Organics Chocolate Protein Powder from Amazon 

(Note: you can also use ANY kind of chocolate protein powder you like, it doesn’t have to be mine)


2 tablespoons of melted and slightly cooled coconut oil


1/4 cup smooth almond butter (My favorite almond butter is Barney Butter smooth with no added salt or sugar from Amazon. Note: you may use cashew butter or peanut butter instead, but I highly recommend the almond butter.)


1/2 cup coconut sugar (My favorite is nutiva coconut sugar from amazon. Note: you may use maple syrup or Nunaturals NuStevia Simple Syrup baking stevia but I recommend the coconut sugar.)


1TABLESPOON vanilla extract 


2 cage free/ free range eggs


1 cup canned coconut milk (my favorite is the brand Natural Value Coconut Milk from Amazon)


1/2 cup coconut flour


2 teaspoons baking powder


1/3 cup chocolate chips (My favorite is Enjoy Life Dark Chocolate Morsels)

METHOD For Creamy Chewy Chocolate Protein Powder Muffins: 


1. Preheat oven to 350 degrees F. Line a 12 regular size cup muffin pan or 24 mini cup muffin pan with cupcake liners.



2. Add almond butter, coconut oil, coconut sugar and vanilla extract to a bowl and with a hand 

mixer mix, on medium speed, until well combined. Slowly add in eggs, one at a time; beat againfor one minute until batter is smooth. 


Pour in coconut milk and mix on low speed until combined. 



3. In a small bowl whisk together coconut flour, baking powder, and MaryRuth Organics Chocolate Protein Powder. Slowly add dry ingredients to wet ingredients and mix on low speed until batter is smooth. Fold in chocolate chips with a spoon. Use a large spoon or cookie scoop to disperse batter evenly into cupcake liners. 



4. Bake for 17 minutes for mini muffins and 20 minutes for regular size muffins and test with a toothpick until the toothpick comes out clean. 


Cool for 5 min then transfer to your wire rack.



5. Frosting is OPTIONAL on these! (See below recipe) 



6. Store at room temperature for 3 days, in the Refrigerator for 5 days, or in the freezer for 1 month and re-heat in a toaster oven when hungry! Note: if you add frosting to the muffin then store in refrigerator for up to 3 days. 




Prep Time: 10 minutes 

Ready In: 20 minutes  


Note: this recipe needs a can of coconut milk in the refrigerator overnight! 


Ingredients For Frosting:


3/4 cup Palm Shortening (you can use regular palm shortening or also the brand Nutiva shortening which is also made of coconut oil, Palm fruit oil, and red palm oil) 


1/2 cup full fat coconut milk that was in the refrigerator overnight (scrape the top of the coconut milk off the can to get 1/2 cup) 


1/2 cup cashew butter (I recommend to use Artisana Raw Cashew Butter available on Amazon!)


1 & 1/2 cups sifted maple sugar made from 100 percent maple syrup (if you want a sweeter frosting you may use 1 & 3/4 cups instead of 1 & 1/2 cups maple sugar so taste it as you go along) 


1 tablespoon sifted coconut flour 


1 teaspoon vanilla extract 


1 dash of fine pink sea salt 





1) In a bowl of a stand mixer fitted with the whisk attachment combine the Palm shortening, coconut milk, cashew butter, and sifted maple sugar and beat on medium high speed until combined for 5minutes. If you do not have a stand mixer you may use a hand mixer. 


2) Add the sifted coconut flour, vanilla extract and sea salt and beat again until well combined. 


3) Frost your cooled protein powder muffins and enjoy with family, friends, and co-workers :)
